College of Agriculture, University Tikrit discussed a Ph.D. thesis extracting Anthocyanins from some plant sources and comparing its chemical and physical properties to be used as a coloring substance in foods by the postgraduate student, Mrs. Anwar Ahmed Khalaf Hazaa. The thesis aimed at extracting anthocyanin pigments from some plant sources, including gujarat, red cabbage, beet, red carrots and red radish grown in Salah Al-Din Governorate, estimating the chemical composition of plant samples and determining the percentage of anthocyanin pigment extracted. The thesis confirmed that the chemical composition of the plant samples reviewed a high content of nutrients, especially carbohydrates, which were the highest concentration of the rest of the other components and the extraction with a mixture of water, ethanol and acetic acid gave the highest yield of Anthocyanins compared to the extraction with the rest of the solvents.
