A joint research team in the Universities of Baghdad and Diyala obtained a patent on extracting inhibitory substances for lipid-lowering enzymes from sunflower seeds and using them to expand the expiration date of the Iraqi soft cheese.
The patent, in which granted by the Central Organization for Standardization and Quality Control Unit of the Ministry of Planning, included extracting a substance from the seeds of the sun flower to inhibit the enzymes of lipase that causes unwanted lipolysis in some food products, especially dairy products.
